As a absolute beginner in this field, I have the notion that all signals from each and every sensor/transducer are fed to the ECU. The ECU then dishes out control signals based on the inputs received, and you could simply program a limp home mode in the presence of any odd signals from any of the sensors. Can you kindly share with me sensors/devices whose signals are ignored by the ECU, and go straight to their destination on the bus?

Depends on everything. Sometimes there are Steering or G-Sensors that directly transmit on the CAN bus, but typically, they connect along with other sensors to some type of module that will do the communications. The Factory Workshop manuals are useful for understanding how the connections are made in OEM vehicles.
