I would like to know if it is a problem to twist 3 pairs of twisted pairs from different CANs together (without shield), not physically but because of signal problems.

I believe you need to keep each CAN bus twisting just it's own CAN hi / CAN lo signals. You may then twist the already twisted CAN buses around each other. I doubt you need a shield, but you might do that in the interest of best possible isolation.

then the example attached could it be correct? CAN1 H and CAN1 L like always, and then CAN2 H and CAN2 L around CAN1, like a picture. I need a good core in the loom.

I could not tell from the picture, it looked to me like you had a CAN 1 twist, a CAN 2 twist, then when they were together, there was only a single twist with 4-wires in parallel. So I thought you twisted them them with them all parallel, not two twisted pairs twisted together, which is what is needed.
