Hi can we still get a good ignition timing map with out a use of a dyno?
Well you need some way to measure the torque. I won't say no, because there might be other clever ways of measuring torque. You do need to have some type of audible knock detection gear.

The most basic tool is a stop-watch, measuring the accelleration times over a fixed distance and/or speed/rpm range.
As David said, you REALLY need some method of checking for 'knock' as the vehicle is likely to be quite loud, and sub-audible knock can easily cause engine damage - which is why the assistance of listening 'cans' or engine sensors is so important.
