so when I look at my car's lambda while the engine's running should I get a reading of 1.00 or what?

For a stock street car, 1.0 Lambda will usually provide the least emissions, which is what OEM ECUs are targeting for idle and cruising conditions. At Wide Open Throttle (WOT) you will typically see a richer mixture, usually .88-.92 in normally aspirated, and often 0.80 - 0.85 (or lower) for force induction.
