I was watching the E85 course, and I noticed Andre talk about the E85 hold function and how you can enable the ecu to hold a specific ethanol content. What would be the reasoning for this? Andre said if you notice your ethanol content dropping off as load/rpm increases then there is a good chance you are having a fuel supply issue. So if this is the case, wouldn't the hold function be just a "bandaid" for the fuel supply issue?

You're right that the ethanol hold function is a bit of a bandaid. My preference would be to ensure you have enough fuel supply, however that doesn't change the fact that many ECUs do include this function so it's important to know how it works.
