I would like to find out what causes a bearing knock when you have just fitted new bearings.

The wrong sized bearings? No oil pressure?

I would need to look into that because we used the standard bearing because we thought it crankshaft was also standard

Did you measure the journal diameter? Did you measure the installed bearing diameter?

They may also have been incorrectly installed.

Even a simple vernier will identify if it's been reground, as most measure to 0.001", with reasonable accuracy, but a mic' would be needed for the tolerance.

As an aside, many years ago I sold a reground crankshaft with the tag on it specifying the undersize - the vehicle's owner tried coming after me for compensation when HIS engine builder fitted std shells...
