I am trying to determine if the Haltech R5 and accessories is the right product line for me and my vehicle design?

Without buying a possibly complete package of a product that is not helpful to me.

I cant figure out how to add PDMs, Thermocouplers, Wideband O2 expansions, etc... to the tree. I am thinking they won't show up till they are all connected and brought online. Which, to me, means I have to have the product here and powered up to test it.

How can I properly test the design capabilities, without investing in potential the wrong equipment?

I found it...

In your "Tree" you can select your controller... in my case the Nexus R5

At the bottom of the branch there is a "Connections" selection... select it

Then select "CAN"

Then select "Haltech CAN System"

In here you can add any device you wish to your system, within limits... I/O, PD16, Tire Pressure Sensors, Thermocouples, Keypads, Wideband Sensors, Dashboards, and even a Dyno selection...
