We have learned from the courses provided that MAF scaling is a crucial step in the tuning process.
However many tuners remove the Maf sensor and rely on the Map sensor for load.
Is this typically done in tuning? In this case how should the fuel trim compensation be addressed

Fuel trim on speed density (MAP based) tunes is addressed via tuning of volumetric efficiency in some cases, or some systems have a main fuel on time table. It really depends on the particular system.
