Ok guys so I understand AFR's and the fundamentals to adjusting and working out the desired AFR on a vehicle.

I am just looking for a baseline to start with for WOT and boosted zones of a GM 6.0 litre now fitted with a super charger and Water Injection running a 9.5 pound pulley and non intercooled.

I was thinking 11: 1 is a smart and safe place to start being it on 98 octane fuel.

I know this is a pretty broad question but does this seem somewhere I can start with - listen to knock as I go with my knock detection.

I would say that 11:1 is a pretty safe place to start. It's likely that you'll be able to run a little leaner than this but it's always safest to start a little rich and then lean the mixture to see how the engine responds.
