Where would you typically ground the one end of the shielding wire?

This should be grounded to an earth at the ECU header end. There is often a dedicated earth terminal for a shield.

On the 02-04 Acura RSX wire diagram, it looks like the only two shielded wires are the knock sensor and the secondary o2 sensor. Can anyone confirm that I'm not missing anything? In what cases would you not need shielding on other critical sensors, like crank/cam position sensors?

When an extra cost option is not needed, engineers will do everything possible to reduce the cost. I'm sure plenty of testing shows that with the wire routing used, there was no need for shielding. Often new designs only add things like shielding if there is a problem found during development.
